Speculoos Cake
A soft and flavorful speculoos cake with warm spices and a rich, caramelized taste. Perfect for dessert or with a cup of coffee.

Ingredients
- speculoos biscuits (Lotus Biscoff) 100g
- soft butter (unsalted) 200g
- fine granulated sugar 200g
- eggs 4
- self-rising flour 200
- speculoos spice mix 1tsp
- speculoos spread (Lotus Biscoff) 75g
Method
- Preheat the oven to 170°C
- Crush the speculoos biscuits
- Mix butter and sugar softly until smooth
- Add eggs one by one
- Add flour and speculoos spice mix
- Fold in the crushed biscuits
- Grease the cake tin or use baking paper
- Fill the cake tin with half of the batter
- Spread half of the speculoos paste over it and stir it in a little
- Add the rest of the batter and finish again with the rest of the speculoos paste
- Sprinkle some leftover speculoos cookie crumble over it
- Bake for about 60 minutes
- Let the cake cool in the tin for a few minutes, then turn it out onto a cooling rack
Chef’s tip: Let the cake rest before slicing to allow the flavors to fully develop.
